2 8oz packs of cream cheese, softened
3/4 cup granulated white sugar
2 large eggs
1 teaspoon vanilla extract

Preheat your oven to 350oF.
In a medium bowl, cream the cheese and gradually beat in the sugar and mix well. Stir in the eggs and add the vanilla. Line a cupcake or muffin pan with liners and fill each with the mixture to about 2/3 full.
Bake the cheesecake cupcakes for about 20 to 25 minutes. The cupcakes should be firm but still soft to touch. Remove from the oven and cool on a wire rack.
Chocolate Cheesecake Cupcake
Here’s a recipe that combines a cupcake batter with a cream cheese filling

1 8oz pack of cream cheese, softened
1/3 cup sugar
1 large egg
2/3 cup semisweet chocolate chips
Cupcake Batter
1 and ¼ cup flour
1/4 cup cocoa powder
1 teaspoon baking soda
Pinch of salt
6 tablespoons butter
1 cup granulated white sugar
1 large egg
1 cup water
1 teaspoon vanilla extract
Directions
Preheat the oven to 375oF.
Make the filling by creaming the cheese then adding the egg. Mix until incorporated. Gradually add the sugar and mix well. Stir in the chocolate chips.
In a separate bowl, sift the flour, cocoa powder, baking soda and salt. Cream the butter in another bowl and add the sugar gradually. Cream until light in color. Add the egg and mix until combined. Add the flour mixture and the water and stir until well combined. Add the vanilla extract and mix.
Line the cupcake or muffin tray with liners and pour enough of the batter to cover the bottom. Drop a heaping spoonful of filling and top off with batter to cover it. Place in the oven and bake for around 20 to 30 minutes. The cupcakes should be firm but springy to the touch.
Remove from oven and let cool for a few minutes. Take the cupcakes out of the tray and let cool fully on a wire rack.
