Ingredients
5 cups apples, peeled and thinly sliced
1 cup fresh cranberries
½ cup quick-cooking rolled oats
½ tsp + ½ tsp ground cinnamon
2 tbsp white sugar
3 tbsp brown sugar
2 tbsp unbleached all-purpose flour
2 tbsp butter
Directions
Preheat oven to 375 degrees Fahrenheit.
Place apple splices and fresh cranberries into a 2 quart baking dish. Combine white sugar and ½ tsp cinnamon and add to the apple/cranberry mixture. Stir well to coat.
In a separate bowl, mix together oats, brown sugar, flour and ½ tsp cinnamon. Cut in the butter with a pastry blender or two knives until the mixture resembles crumbs. Sprinkle the oats over the fruit mixture and bake in the oven for about 30 minutes or until the fruit is tender.
Serve immediately with low-fat vanilla yogurt (or vanilla ice-cream). Serves 6.
